Which foods contain little or no vitamin K?
Vitamin K is concentrated in leafy greens; many refined grains, sugary foods, numerous fruits, starchy staples, and many processed items are relatively low in vitamin K. However, the goal should not be “vitamin-K-free eating.” Vitamin K is physiologically necessary, and deficiency can increase bleeding risk. Even for warfarin users, the aim is consistency, not elimination. A higher-quality diet with stable vegetable intake is typically the safest long-term approach.
